My boss, Barb, is out of town for a week. Being the generous and wonderful woman that she is, she offered me her raw milk share for the week. She’s a member of the Our Farm and Dairy cow share program, and gets her gallon of raw milk delivered directly to our office every Friday. Well, “delivered” is a bit of an overstatement, one that sounds pretty illegal in Michigan. To be more accurate, every week a different share owner picks the milk up from St. Johns and drops it off in a central location – that central location happens to be our office (a lot of the share owners work in my department, no surprise there).
I don’t use a ton of milk during the week, and I was afraid it would go sour before I went through a full gallon, so I’m giving half of it to my friend Lauren. I’d like to do something sort of special with the other half, however, seeing as it’s my first raw milk ever. Some of it will probably go into this week’s batch of yogurt, but can anyone give me a good recipe to showcase this tasty, superfresh milk that I probably won’t get a chance to use again until I have lots more money?
Um, it makes the best hot chocolate ever.
I am surprised you don’t think you’ll go through a gallon, especially if you are planning on using it to make yogurt!
Another thing would be rice pudding…
When we did the raw milk thing (our lady crossed state lines with it so she got caught by MI) we went through a LOT of milk. It tastes a lot better. This is not the time of year (less fat in hay) but we also made butter with ours.
I know, I realized that as soon as I told Lauren she could have half. We normally go through about 1/2 gallon a week. Honestly, I mostly just use it for yogurt. I don’t use a lot of milk in my cooking, and I never drink it plain. I really should have regarded this as a special occasion though. Rice pudding does sound delicious…
Rice pudding uses an ungodly amout of milk (not complaining), but as a non-sweet eater, I’d go with the yogurt.
So, basically, I’ve contributed nothing.
Hmmm…. I was going to say “use it however you like to use milk”. We drink raw milk every day, so it becomes hard to see it as that special thing, but I know what you mean.
Make a double batch of yogurt!
It’s probably to late now for suggestions, but, if you get a chance to get your hands on fresh milk again, try making some sour cream. It’s fun and easy. Skim one cup of cream off the top of the milk, add two tablespoons of cultured buttermilk, let sit out on the counter for tweleve to twenty four hours. It may or may not be as thick as the stuff that comes from the store, but it tastes great. Make sure your containers are sterilized.
I don’t know how much meat you eat or don’t eat so if you are vegetarian don’t be offended please! If you can locate two fat fresh humane sustainable pork chops, then milk braise them with your milk. It will be a complete and total taste sensation.
Other great uses of the milk: fresh brewed ice coffee. Chocolate pudding. Drink it out of the bottle. Etc.
